One-pot linguine with shrimp, spinach and white wine-lemon sauce

Serves 4

  1. 1lb 16-20c shrimp, shells reserved
  2. 2-1/2 cups white wine
  3. 2-1/2 cups water
  4. 8oz bottle clam juice
  5. 1lb linguine
  6. 5oz spinach
  7. 4tb olive oil
  8. Zest and juice of 2 lemons
  9. 1 clove garlic
  10. 1oz parmesan
  11. 4tb basil
  12. 2tb butter
  • Brown shells until spotty, 2-4 minutes. Add wine and simmer for 5 minutes. Skim out and discard shells.
  • Add 3-4, bring to a boil, add linguine and simmer for 10 minutes. Add shrimp and simmer for 2-4 minutes.
  • Take off-heat, add spinach and mix until wilted, about 30 seconds. Mix in 7-12 and serve.
