One-pan meatloaf and smashed potatoes

Serves 4

  1. 1 egg
  2. 2tsp mustard
  3. 2tsp worcestershire
  4. 1/2tsp garlic powder
  5. 1/2tsp dried thyme
  6. 14 saltines, crushed
  7. 1-1/4 cup milk
  8. 1/2 cup chives
  9. 1/2tb salt
  10. 3/4tsp pepper
  11. 12oz lean ground beef
  12. 12oz ground pork
  13. 1/2 cup ketchup
  14. 4tb brown sugar
  15. 7tsp cider vinegar
  16. 2lb red potatoes, halved
  17. 1 cup sour cream
  • Mix 1-6, 1/2 cup milk, 4tb chives, 1tsp salt and 1/2tsp pepper. Mix in 11-12. Place a 10in x 6in square of foil poked with holes on top of a rack, place on a baking sheet and form mixture into a 9in x 5in loaf.
  • Mix 13-14 and 4tsp vinegar and brush half of mixture onto loaf. Place potatoes on baking sheet in a single layer and bake at 350 degrees for 45 minutes.
  • Brush loaf with remaining glaze mixture. Bake for 20 minutes. Broil for 5 minutes.
  • Set meatloaf aside and rest for 10 minutes. Coarsely mash potatoes. Microwave remaining milk and sour cream for 1 minute and fold into potatoes along with remaining chives, vinegar, salt and pepper.
