Spaghetti al Limone

Serves 4-6

  1. 1lb spaghetti
  2. 4tb olive oil
  3. 1 shallot
  4. 4tb cream
  5. 2tsp lemon zest
  6. 4tb lemon juice
  7. 1oz parmesan
  8. 1/2tsp pepper
  9. 1/4tsp red pepper flakes
  10. 2tb fresh basil
  • Cook pasta and drain, reserving 1-3/4 cups cooking water.
  • Heat 1tb oil and cook shallot for 2 minutes. Add cream and 1-1/2 cups reserved water and simmer for 2 minutes.
  • Remove from heat and add pasta, remaining oil and 5-9. Cover and rest for 5 minutes, tossing occasionally. Add basil and remaining reserved water if necessary. Serve.
