Crispy lemon cookies

Makes 2 dozen

  1. 8tb butter
  2. 100g sugar
  3. 1tb lemon zest
  4. 1tb lemon juice
  5. 1/2tsp vanilla extract
  6. 120g flour
  7. 1/4tsp salt
  8. 1/8tsp baking soda
  • Cream 1-3. Beat in 4-5. Beat in 6-8. Roll into a 2in log and chill 2 hours-overnight.
  • Slice log into 1/4in rounds. Place 2in apart and bake at 350 degrees for 10 minutes.
