Buttermilk red cabbage slaw

Serves 8

  1. 1 head red cabbage, shredded
  2. 1/2tb salt
  3. 1 carrot, shredded
  4. 1 cup buttermilk
  5. 4tb mayo
  6. 4tb sour cream
  7. 4tb parsley
  8. 2 shallots
  9. 1tsp cider vinegar
  10. 1tsp sugar
  11. 1/2tsp dijion mustard
  12. 1/4tsp pepper
  • Toss cabbage with 1tsp salt and drain for 1-4 hours. Rinse, press down without squeezing and dry off with paper towels.
  • Toss cabbage with remaining ingredients and chill for at least 30 minutes. Lasts 3 days.
