Makes 10 cups
- 3lb beef shanks, cut into 1in pieces
- Bouquet garni
- 3 quarts water
- 3 carrots
- 2 onions, 1 quartered and 1 chopped
- 2lb lean ground beef
- 3 egg whites
- 3 egg shells
- 5 sprigs tarragon
- Simmer 1-3, 2 carrots and quartered onion for 6 hours. Strain and cool.
- Process remaining ingredients. Whisk into broth and simmer until solids form raft on surface of pot and liquid is clear. Discard solids and strain. Lasts 5 days.
