Beef Consomme

Makes 10 cups

  1. 3lb beef shanks, cut into 1in pieces
  2. Bouquet garni
  3. 3 quarts water
  4. 3 carrots
  5. 2 onions, 1 quartered and 1 chopped
  6. 2lb lean ground beef
  7. 3 egg whites
  8. 3 egg shells
  9. 5 sprigs tarragon
  • Simmer 1-3, 2 carrots and quartered onion for 6 hours. Strain and cool.
  • Process remaining ingredients. Whisk into broth and simmer until solids form raft on surface of pot and liquid is clear. Discard solids and strain. Lasts 5 days.
