Zucchini ribbons with lemon and garlic

Serves 4

  1. 1 clove garlic
  2. 1tsp lemon zest
  3. 1tb lemon juice
  4. 2tb oil
  5. 1tb fresh herb
  6. 4 8oz zucchini
  • Mix 1-5 and rest for 10 minutes. Use a vegetable peeler to slice 3 ribbons off one side of zucchini. Repeat on other 3 sides and continue until seeds are reached; discard core.
  • Heat a 12in skillet on medium-high heat. Cook every thing for 3-4 minutes and serve.
