Confit fried potatoes

Makes 2-1/2 cups

  1. 4 cloves smashed garlic
  2. 2 sprigs rosemary
  3. 3 russet potatoes, peeled and cut into 1/2in pieces
  4. 3 cups olive oil
  5. Salt
  • Place 1-4 in a uncovered dutch oven and transfer to a 225 degree oven for 90 minutes. Let cool, skim out potatoes and discard garlic and rosemary.
  • Heat oil to 350 degrees. Fry potatoes for 3 minutes. Set on paper towels and salt immediately.
