Makes 2-1/2 cups
- 4 cloves smashed garlic
- 2 sprigs rosemary
- 3 russet potatoes, peeled and cut into 1/2in pieces
- 3 cups olive oil
- Place 1-4 in a uncovered dutch oven and transfer to a 225 degree oven for 90 minutes. Let cool, skim out potatoes and discard garlic and rosemary.
- Heat oil to 350 degrees. Fry potatoes for 3 minutes. Set on paper towels and salt immediately.
