Mushroom bisque

Serves 6-10

  1. 1lb white mushrooms, whole
  2. 8oz crimini mushrooms, whole
  3. 8oz shiitake mushrooms, whole
  4. 1tb salt
  5. 1 onion
  6. 1/2tsp fresh thyme
  7. 1 clove garlic
  8. 2tb sherry
  9. 4 cups water
  10. 3-1/2 cups broth
  11. 2/3 cup cream
  12. 2 yolks
  13. 1tsp lemon juice
  14. 1tb chives
  • Toss 1-4, cover and microwave for about 12 minutes or until reduced by 2/3, stirring every 4 minutes. Drain and reserve liquid.
  • Cook mushrooms for 8-10 minutes. Add 5-7 for 2 minutes. Add sherry and cook until evaporated. Deglaze with mushroom liquid, add 9-10 and and simmer for 20 minutes.
  • Process soup. Mix 11-12, temper mixture and add to pot. Bring to 165 degrees on low heat, add 13-14 and serve.
