Millionaire’s shortbread

Makes 40 pieces

  1. 12-1/2oz flour
  2. 3-1/2oz sugar
  3. 1-1/4tsp salt
  4. 1-1/2 cup butter, melted
  5. 14oz can condensed milk
  6. 7oz brown sugar
  7. 1/2 cup heavy cream
  8. 1/2 cup corn syrup
  9. 8oz bittersweet chocolate
  • Combine 1-2 with 3/4tsp salt. Mix in 1 cup butter and press into a foil-lined 13in x 9in pan, prick with a fork and bake at 350 degrees for 25-30 minutes. Press down on crust and let pan cool on a rack for 20 minutes.
  • Cook remaining salt and butter with 5-8 until it reaches 235-240 degrees and pour over crust. Cool for 1-1/2 hours.
  • Temper chocolate and spread over caramel. Chill for 10 minutes, lift out of pan and cut 4 times lengthwise and 10 times crosswise. Serve.
