Makes 1-1/2 cups
- 2lb onions, halved and cut into 1/4in slices
- 2tsp salt
- 1-1/2 cup oil
- Toss and microwave 1-2 for 5 minutes. Drain, squeeze out water and dry thoroughly.
- Heat oil in a dutch oven on high heat and fry onions for 25-30 minutes. Drain onions on paper towels. Oil can be strained and refrigerated for 1 month.
