Nantais butter sauce

Makes 1 cup

  1. 2tb shallot
  2. 1/3 cup white wine
  3. 1/3 cup creme fraiche
  4. 8tb butter, cut into pieces and chilled
  5. 1tb fresh herb
  • Cook 1-2 for 5 minutes. Add creme fraiche and cook for 5 minutes. Vigorously whisk in butter one piece at a time. Add herb and serve.
