Mussel salad

Serves 4

  1. 2lb mussels
  2. 2 shallots
  3. 6tb white wine
  4. 1-1/2tb aioli
  5. 1/2tb chives
  6. 1/2tb tarragon
  7. Dash of tabasco
  • Steam 1-3. Skim out mussels and place in colander set over a bowl.
  • Remove mussel meat. Whisk juices in bowl with remaining ingredients and fold in mussels. Chill for 2-3 hours. Bring to room temperature for 20 minutes before serving.
