Lemon-almond paste cake with basil-honey berries

Serves 8

  1. 150g sugar
  2. 230g almond paste
  3. 8tb butter
  4. 1tsp vanilla extract
  5. Zest and juice of 1 lemon
  6. 3 eggs
  7. 60g flour
  8. 1tsp baking powder
  9. 1/8tsp salt
  10. 4tb basil
  11. 2tb honey
  12. 2 cups berries
  13. Powdered sugar
  • Process 1-2. Process 3-4 and lemon zest. Process 1 egg at a time. Pulse 7-9. Bake in a 9in x 2in cake tin at 350 degrees for 45-50 minutes. Rest in pan for 30 minutes and transfer to a rack to cool.
  • Meanwhile, combine lemon juice with 10-12 and rest for 30 minutes. Dust cake with powdered sugar and top with berries.
