Chocolate-earl grey budino

Serves 6

  1. 3tb cornstarch
  2. 1tb cocoa powder
  3. 1/3 cup sugar
  4. 1/4tsp salt
  5. 5tsp earl grey, crushed fine
  6. 2 cups milk
  7. 3oz milk chocolate
  8. 1tb butter
  9. 1tb powdered sugar
  10. 3/4 cup cream
  • Sift 1-4 and 1/2tb tea. Add to milk, simmer until thickened and pour over 7-8. Whisk and divide into 6 1-cup ramekins. Chill at least 1 hour.
  • Whisk 9-10 and remaining tea into stiff peaks. Divide into ramekins and serve.
