Braised halibut with fennel, carrots and shallots

Serves 4

  1. 4 6-8oz halibut fillets, 3/4in-1in thick
  2. 6tb butter
  3. 1 fennel bulb, sliced
  4. 8oz carrots, shaved
  5. 4 shallots, sliced
  6. 1tsp dijon mustard
  7. 3/4 cup white wine
  8. 1tsp lemon juice
  9. 1tb tarragon
  • Cook fish in butter on one side for 3-4 minutes and set aside. Add 3-6 and cook for 5 minutes. Add back fish and wine and simmer covered for 10-15 minutes.
  • Set fish aside. Simmer skillet for 2-3 minutes. Add 8-9 and serve.
