Skillet pizza

Makes 11in pizza

  1. 5-1/2oz bread flour
  2. 1/2tsp yeast
  3. 3/8tsp salt
  4. 6tb ice water
  5. Olive oil
  6. 1/2 cup sauce
  7. 4oz fresh mozzarella, cut into 1/4in slices
  8. 1tb basil
  • Pulse 1-3 in food processor 5-6 times. Stream in water with motor running. Stream in 1tb olive oil. Process for 30 seconds. rest for 2 minutes. Process for 30 seconds. Knead briefly and rise for 1.5-2 hours and room temperature or 8-16 hours in the fridge. If refrigerating, leave at room temperature for 1 hour before baking.
  • Roll out into a 11in circle. Brush a 12in skillet with olive oil and press in dough. Spread sauce, leaving a 1/2in border and top with mozzarella. Cook on high heat for 3 minutes or until edges are puffy and underside is brown and spotty. Transfer to a 500 degree oven and bake for 7-10 minutes. Transfer to a rack to cool. Top with basil and serve.
