Roasted boned chicken with rosemary and garlic

Serves 4

  1. 4lb chicken, boned and left whole
  2. 4 sprigs rosemary, left whole
  3. 10 cloves garlic, peeled
  4. 8oz potatoes, cut into 1-1/2in pieces
  5. 8oz carrots, cut into 1-1/2in pieces
  • Place chicken skin-side down, arrange 2-3, roll and tie to secure. Roast with 4-5 at 350 degrees for 60-90 minutes, tossing veggies every 30 minutes.
