- 4lb chicken, boned and left whole
- 4 sprigs rosemary, left whole
- 10 cloves garlic, peeled
- 8oz potatoes, cut into 1-1/2in pieces
- 8oz carrots, cut into 1-1/2in pieces
- Place chicken skin-side down, arrange 2-3, roll and tie to secure. Roast with 4-5 at 350 degrees for 60-90 minutes, tossing veggies every 30 minutes.
