Gnocchi with beef roulade

Serves 4

  1. 4 slices top round, 6in x 4in and 1/4in thick
  2. 1tb dijon mustard
  3. 1 onion
  4. 8 slices bacon
  5. 4 gherkins
  6. Flour
  7. 2 carrots
  8. 1 leek
  9. 2 cloves garlic
  10. 7tb red wine
  11. Stock
  12. 2tb butter
  13. 1lb gnocchi
  • Lay beef flat and layer 2-5. Roll, tie to secure and dredge in flour. Brown and set aside.
  • Add 7-8 and cook for 10 minutes. Add garlic and cook for 1 minute. Ad wine and reduce for 2 minutes. Add back beef and stock to cover and simmer for 1-1/2 hours.
  • Remove beef to rest. Whisk butter in pan and add gnocchi. Slice beef and add back in. Serve.
