Cappellini with basil chicken meatballs, lemon and feta

Serves 4

  1. 12oz ground chicken
  2. 2 eggs
  3. 2tb bread crumbs
  4. 1 clove garlic
  5. 1/8tsp nutmeg
  6. 2tb parsley
  7. 8 basil leaves
  8. 4tb olive oil
  9. Zest and half the juice of 1 lemon
  10. 8oz cappellini
  11. 4tb feta
  • Mix 1-6 and 6 leaves basil and form 2tsp size meatballs. Brown in olive oil, add 9-11 and toss for 1 minute on low heat. Add remaining basil and serve.
