Stovetop no-parboiling crispy potatoes

Serves 4

  1. 1-1/2lb red potatoes, halved or quartered
  • Rinse and dry potatoes. Do not salt.
  • Cook on medium high heat with out moving for 5-6 minutes.
  • Flip and cook for 5-6 minutes.
  • Lower heat, cover and cook for 6-9 minutes. Season to taste.
