- 16 baby yukon potatoes
- 8tb butter, melted
- 4 cloves garlic
- 4tb fresh herbs
- Cut a very thinly slice lengthwise off of each potato so they lay flat. Make 1/8in slices mostly through potatoes, not cutting all the way through.
- Brush with half of 2-4 and roast at 425 for 15 minutes. Brush with remaining mixture and continue roasting for 5-15 minutes.
