Chicken Forestiere

Serves 4-6.

  1. 3/4oz dried mushrooms
  2. 4tb boiling water
  3. 8 bone-in thighs
  4. 2 cups quartered mushrooms
  5. 2 onions, sliced
  6. 2 cloves garlic
  7. 1/2 cup sherry
  8. 8oz carrots, cut into batons
  9. 3/4 cup stock
  10. 2/3 cup cream
  11. 1tb lemon juice
  12. 1tb parsley
  • Rest 1-2 for 20 minutes.
  • Meanwhile, Brown thighs skin-side down and set aside. Cook quartered mushrooms and set aside.
  • Cook onions for 5 minutes. Add garlic for 1 minute. Deglaze with sherry, add 8-9 and quartered mushrooms and simmer covered for 10 minutes.
  • Add chicken and continue simmering for 20 minutes.
  • Add cream and continue simmering uncovered for 10 minutes. Add dried mushrooms and 11-12 and serve.
