1-pan chicken and mashed potatoes and salsa verde

Serves 4

  1. 4-4.5lb chicken, spatchcocked
  2. 2lb yukon potatoes, sliced 1/4in thick
  3. 1-3/4 cup water
  4. 6 cloves garlic
  5. 1/2 cup half-and-half
  6. 2tb chives
  7. 1/2 cup parsley
  8. 2tb capers
  9. 1 shallot
  10. 1-1/2tb lemon juice
  11. 6tb olive oil
  • Layer 1-3 in a 12in skillet and roast at 450 degrees for 50-65 minutes. While chicken is resting, boil off any remaining liquid, about 8-10 minutes, and mash potatoes with 5-6. Serve with 7-11.
