Waffle iron potatoes

Omit cheese and replace butter with oil to make vegan

Serves 4

  1. 1lb yukon potatoes, shredded
  2. 1 shallot, grated
  3. 1 clove garlic, grated
  4. 1tsp fresh thyme
  5. 4tb shredded cheddar
  6. Sour cream
  7. Bacon
  8. Chives
  • Salt potatoes and let drain for 30 minutes. Squeeze out water and mix with 2-5.
  • Brush waffle iron with melted butter and cook mixture in batches for 8-10 minutes. Serve with 6-8.
