Sour cream black pepper madeleines

Makes 12

  1. Vanilla bean
  2. 6tb butter
  3. 67g sugar
  4. 2 eggs
  5. 190g sour cream
  6. 68g flour
  7. 40g ground almonds
  8. 3g baking powder
  9. 2g black pepper
  10. 1g salt
  • Scrape seeds from vanilla into butter. Melt, add pod, cover and set aside to cool.
  • Beat 3-4 until mixture reaches ribbon stage. Beat in sour cream. Fold in 6-10. Remove pod and fold in butter. Chill overnight.
  • Bake at 425 degrees for 10-11 minutes.
