Shrimp stock

Makes 6-8 cups

  1. Shells from 2lb shrimp
  2. 2 carrots, diced
  3. 1 rib celery, diced
  4. 1 onion, diced
  5. 4tb white wine
  • Sweat 1-4 for 10 minutes. Add wine and reduce until evaporated. Add water to cover and simmer covered for 45 minutes. Lasts 1 week.
