Meatball soup

Serves 4

  1. 1 carrot
  2. 2 ribs celery
  3. Half an onion
  4. 4 cups broth
  5. 1lb ground beef
  6. 1 egg
  7. 1 clove garlic
  8. 1/8tsp nutmeg
  9. 1-3/4 grounded smoked almonds
  10. 2tb parsley
  • Cook 1-3 for 8 minutes. Add broth and bring to a simmer.
  • Mix 5-9 and drop 1in balls into broth. Cook until meatballs float to the top, about 10 minutes. Top with parsley and serve.
