Lemon herbed oven-poached salmon fillets with dill-cucumber salad

Serves 4

  1. 4 6-8oz salmon fillets
  2. 1tb oil
  3. 1tb parsley
  4. 1tsp lemon zest
  5. 2tb lemon juice
  6. 4tb dill
  7. 2 cucumbers
  8. 6tb Greek yogurt
  • Place salmon on heavy-duty foil. Top with 2-4, 1tb lemon juice and 1tb dill. Make pouch with foil and bake at 250 degrees for 45-60 minutes.
  • Mix remaining ingredients and serve.
