Citrus squid with salsa verde

Serves 4

  1. 1-1/2lb cleaned squid
  2. 1 clove garlic
  3. Zest of 1 orange
  4. Zest of 1 lime
  5. Zest of 1 lemon
  6. 5tb parsley
  7. 3/8tsp red pepper flakes
  8. 6-1/2tb oil
  9. 1 anchovy filet
  10. 1/2tsp chopped capers
  11. 1/2tsp red wine vinegar
  • Marinate 1-4 and all but 1/4tsp lemon zest, 2tb parsley, 1/4tsp red pepper flakes and 4tb oil for 1-4 hours. Cook for 1-2 minutes. Whisk remaining ingredients and serve.
