Smoky pesto rice salad with shrimp

Serves 4

  1. 1lb shrimp
  2. 8tb olive oil
  3. 2tsp lime zest
  4. 10oz baby spinach
  5. 1/2 cup smoked almonds
  6. 1/2 cup cilantro
  7. 1 jalepeno
  8. 2 cloves garlic
  9. 4 cups cooked rice
  10. 4oz feta
  • Toss shrimp with half of 2-4 and cook 3-4 minutes. Set aside.
  • Process remaining 2-4 with 5-8. Mix into rice and toss with feta shrimp and spinach.
