Pork and bean sprout stir-fry

Serves 4

  1. 4tsp soy sauce
  2. 1tb sugar
  3. 1tsp white pepper
  4. 4tsp cornstarch
  5. 2tsp rice wine vinegar
  6. 1/2 cup water
  7. 10oz pork tenderloin, sliced
  8. 4 shallots, sliced
  9. 4 cloves garlic, sliced
  10. 1lb bean sprouts
  11. 4 small red chilies
  12. 2tsp sherry
  13. 4tb chicken stock
  14. 2tb oyster sauce
  15. 2tsp sesame oil
  16. 2 scallions
  • Mix half of 1-4 with 5-7 and marinate 15-30 minutes.
  • Cook pork for 2 minutes and set aside.
  • Cook 8-9 for 30 seconds. Add bean sprouts for 10 seconds, add back pork and red chilies and cook for 30 seconds. Add remaining 1-4 with 12-14 and cook for 30 seconds. Toss with 15-16 and serve.
