Overnight cucumber kimchi

Serves 4

  1. 1lb cucumbers, sliced
  2. 1/2tb salt
  3. 1tb gochugaru
  4. 1tsp fish sauce
  5. 3/4tsp sugar
  6. 4tb chives or scallion
  • Mix 1-2 and drain for 10 minutes. Rinse, mix with remaining ingredients, pack tightly in a jar and leave out covered at room temperature overnight. Transfer to fridge and use within 3 days.
