Overnight bok choy kimchi

Serves 4

  1. 1lb bok choy, halved
  2. 4 cups water
  3. 1tb salt
  4. 1-1/2tb gochugaru
  5. 1tb fish sauce
  6. 1tsp sugar
  7. 1tsp garlic
  8. 1/2tsp ginger
  9. 4tb chives or scallion
  10. 1 small carrot, shredded
  11. 1 small sweet pepper, cut into slivers
  • Brine 1-3 for 45 minutes. Drain and rinse.
  • Mix bok choy with remaining ingredients. Pack tightly in a jar, cover and leave at room temperature overnight. Transfer to fridge and use within 3 days.
