Sausage, potatoes and lentils with creme fraiche

Serves 1

  1. 6oz black or green lentils
  2. 2 sausages
  3. 1 waxy potato, cut into 1/4in pieces
  4. 2 shallots
  5. 1 red chili
  6. 2 cloves garlic
  7. 1tb fennel seeds
  8. 1 bay leaf
  9. 1 cup stock
  10. 1tb red wine vinegar
  11. 1tb creme fraiche
  12. 1tb fresh herb
  • Cover lentils with cold water. Bring to a boil and drain.
  • Brown sausages and set aside. Cook potato for 5 minutes. Add 4-7 for 2 minutes. Add 8-9 and lentils and simmer partially covered for 30 minutes.
  • Slice sausage, mix in and simmer for 2-3 minutes. Mix in 10-12 and serve.
