Greek stuffed braised zucchini

Serves 4

  1. 6 8-9in zucchini, halved crosswise and hollowed
  2. 4oz cooked rice
  3. 10oz ground beef
  4. 1 small onion, grated
  5. 1/2 cup parsley
  6. 1/2tsp cumin
  7. 1/2tsp oregano
  8. 1/2tsp salt
  9. 1/2tsp pepper
  10. 10tb olive oil
  11. 3/4 cup water
  12. 3 egg yolks
  13. Juice of 2 lemons
  • Stuff zucchini with 2-9 and 2tb oil. Place in a pan with remaining oil and water and gently simmer covered  for 30 minutes.
  • Set zucchini aside. Reserve 1 cup liquid and temper 12-13. Serve over zucchini.
