Gyro loaf

Serves 6

  1. 1 onion
  2. 2lb ground beef
  3. 1tb garlic
  4. 1tb dried oregano
  5. 1tb dried rosemary
  6. Pita bread
  7. Lettuce
  8. Tomatoes
  9. Red onion
  10. Feta cheese
  11. Tzatzika
  • Process onion briefly and squeeze out water. Mix with 2-5. Cook in a loaf pan in a water bath at 325 degrees for 60-75 minutes.
  • Place on a cooling rack and weigh down for 15-20 minutes. Slice and serve with 6-11.

Waffle iron potatoes

Omit cheese and replace butter with oil to make vegan

Serves 4

  1. 1lb yukon potatoes, shredded
  2. 1 shallot, grated
  3. 1 clove garlic, grated
  4. 1tsp fresh thyme
  5. 4tb shredded cheddar
  6. Sour cream
  7. Bacon
  8. Chives
  • Salt potatoes and let drain for 30 minutes. Squeeze out water and mix with 2-5.
  • Brush waffle iron with melted butter and cook mixture in batches for 8-10 minutes. Serve with 6-8.

Halibut with potatoes, spring vegetables and cilantro-lime salsa verde

Serves 2

  1. 1 garlic clove, skin on
  2. 2 6-8oz halibut steaks, 1-1.5in thick
  3. 6oz yukon potatoes, cut into 1in pieces
  4. 3/4 cup cilantro
  5. 1/4tsp lime zest
  6. 1tb lime juice
  7. 6tb olive oil
  8. 6oz spring vegetables, cut into 1in pieces
  • Toast garlic in dry skillet until brown and spotty. Set aside.
  • Cook halibut for 3-5 minutes per side. Cover with foil and set aside.
  • While fish is cooking, microwave potatoes covered for 6-8 minutes and set aside. Peel garlic, process with 4-6, fold in oil and set aside.
  • Cook potatoes and veggies for 10 minutes. Top fish with salsa verde and serve.
