Potato rolls

Makes 20

  1. 7g yeast
  2. 1 cup milk
  3. 250g cooked potato flesh
  4. 11tb melted butter
  5. 2 eggs
  6. 50g sugar
  7. 1tsp salt
  8. 625 flour
  • Mix 1-2 and rest until foamy. Mix into 3-7. Mix in flour.
  • Knead smooth, about 10 minutes, and cover in plastic. Leave to rise for 1 hour.
  • Divide into 20 round pieces about 3oz each. Place 3/4in apart, dust lightly in flour, cover and rise for 30 minutes.
  • Bake at 400 degrees for 15 minutes.
