Maple pecan pie

Serves 8

  1. 4tb butter
  2. 1/2 cup sugar
  3. 1/2tsp salt
  4. 3 eggs
  5. 1 cup maple syrup
  6. 1-1/2 cups pecans, toasted and finely chopped
  7. 1 par-baked 9in pie crust, still warm
  • Melt butter in a double boiler. Remove bowl and whisk in 2-3. Whisk in eggs. Whisk in maple syrup and return to heat, stirring until mixture is shiny and hot and reaches 130 degrees. Take off-heat and stir in pecans.
  • Fill crust and bake in the lower-middle of a 275 degree oven for 50-60 minutes, or until mostly set but yields when pressed. Cool for at least 2 hours and serve.
