Bienville oysters

Makes 24

  1. 4oz bacon, chopped
  2. Half an onion
  3. 1/4tsp salt
  4. 1/4tsp cayenne
  5. 1/4tsp red pepper flakes
  6. 6tb butter
  7. 2 cloves garlic
  8. 2tb flour
  9. 1 cup milk
  10. 1 cup shiitake mushrooms
  11. 4oz shrimp, chopped
  12. 1tsp lemon juice
  13. 4tb scallion
  14. 2tb parsley
  15. 2 yolks
  16. 24 oysters
  17. 2tb bread crumbs
  • Crisp bacon. Add 2-5 for 5 minutes.
  • Add 2tb butter and garlic for 2 minutes. Add flour for 2 minutes. Whisk in milk.
  • Bring mixture to a simmer and add 10-11 for 5 minutes. Add 12-14 and take off-heat. Temper yolks.
  • Divide sauce among oysters. Divide remaining butter and top with bread crumbs. Roast at 450 degrees for 15 minutes.
