Broiled eggplant brushed with garlic

Serves 4

  1. 1 head garlic, peeled
  2. 2-1/2tb olive oil
  3. 2 8oz eggplants
  • Simmer garlic for 12-15 minutes. Mix with 2tb oil and set aside.
  • Halve eggplants. Score flesh and brush with remaining oil. Broil until cooked through and brush with garlic mixture. Serve.
