Sweet berry focaccia

Serves 12

  1. 8tb melted butter
  2. 8tb sugar
  3. 9oz bread flour
  4. 9oz all-purpose flour
  5. 2-1/2tb yeast
  6. 1/2tsp salt
  7. 1-1/2 cup water
  8. 1 egg
  9. 1tsp cinnamon
  10. 12oz berries
  • Mix 4tb each of butter and sugar with 3-8. Knead for 10 minutes; dough will be wet and sticky, do not add additional flour. Let rise until doubled, 1/2-2 hours.
  • Deflate dough and let rise for 1 hour.
  • Brush 2tb butter in a 15-1/2in x 10-1/2in pan and transfer dough. Lightly cover and let rise until risen 1/4in above pan.
  • Combine remaining sugar and cinnamon. Sprinkle half of mixture over dough, add berries and sprinkle remaining mixture. Bake at 450 degrees for 20-25 minutes. Drizzle remaining butter and serve.
