Butter layer cake with mascarpone and strawberries

Serves 8-12

  1. 1-3/4 cup butter
  2. 2tb corn syrup
  3. 2 cups sugar
  4. 6 eggs
  5. 1/3 cup sour cream
  6. 5tsp vanilla
  7. 3-1/4 cup flour
  8. 3/4tsp baking powder
  9. 3/4tsp salt
  10. 1 cup cream
  11. 12oz mascarpone
  12. 1/2 cup powdered sugar
  13. 1tsp lemon zest
  14. 1-1/4lb strawberries, sliced
  • Beat 1-3 until fluffy. Beat in 4-5 and 1-1/2tb vanilla until smooth. Mix 7-9 and beat in in 2 additions. Bake in 3 9in cake tins at 350 degrees for 15 minutes. Rotate and continue baking for 10-12 minutes. Let cool.
  • Beat cream to soft peaks. Fold in 11-13 and remaining vanilla until smooth. Spread mixture on top of cakes, reserving about 4tb. Top cakes with strawberries, divide remaining marscapone on the designated bottom and middle layers and arrange layers.
