Stir-fried Asian eggplant

Serves 4-6

  1. 2 Asian eggplants in 1/2in x 2in strips
  2. 1tb salt
  3. 1tb sugar
  4. 1 scallion
  5. 1 red thai chile
  6. 2 cloves garlic
  7. 1tb soy sauce
  8. 1tb sesame seeds
  9. 1tsp pepper
  • Combine 1-3 in a colander and rest for 20 minutes.
  • Fry eggplant for 5 minutes. Add remaining ingredients for 1 minute and serve.
