Seared flank steak with zucchini hash and chimichurri

Serves 2

  1. 12oz flank steak
  2. 2 new potatoes, diced
  3. 8in zucchini, diced
  4. 3 scallions
  5. 1/2 cup peas
  6. 2 cloves garlic
  7. 1/2 cup parsley
  8. 2tb olive oil
  9. 2tsp red wine vinegar
  10. 1/4tsp red pepper flake
  • Cook steak in a 12in pan for 4 minutes. Flip, cook for 3 minutes and set aside.
  • Cook potatoes for 3 minutes. Add zucchini and 2 scallions for 4 minutes. Add 1 clove garlic and peas for 1 minute.
  • Mix remaining scallion and garlic with 7-10. Slice steak and serve.
