Mustard-horseradish potato salad

Serves 6-8

  1. 2lb whole red potatoes
  2. 4tb olive oil
  3. 2tb dijion mustard
  4. 4tsp horseradish
  5. 4tb chives
  • Bring salted water to a boil, add potatoes and simmer for 20 minutes.
  • Shock potatoes in ice water. Drain, cut into 1/2in pieces and mix with remaining ingredients.
