Andong Jjimdak

Serves 4-6

  1. 2lb boneless skin-on chicken thighs
  2. 1/3 cup soy sauce
  3. 2tb mirin
  4. 4tb sugar
  5. 1tb cornsyrup
  6. 1tb oyster sauce
  7. 1tb sake
  8. 1-1/2tb sesame oil
  9. 1tsp pepper
  10. 1 cup stock
  11. 2 russet potatoes, peeled and cut into 1in pieces
  12. 1 carrot
  13. 1 onion
  14. 8 cloves garlic
  15. 4 scallions
  16. 1/2 cup cabbage
  17. 8 Anaheim peppers
  18. 1 cup vermicelli, cooked
  19. 1tb sesame seeds
  • Brown chicken for 3 minutes per side.
  • Add 2-17 and simmer for 20 minutes.
  • Add 18-19 and serve.
