Oyster pan roast

Serves 2

  1. 1/4in red pepper flake
  2. 2tb butter
  3. 1 shallot
  4. 1 clove garlic
  5. 4tb fish stock
  6. 1/2 cup cream
  7. 1tb lemon juice
  8. 1tb sherry
  9. 16 oysters, liquor reserved
  10. 2tsp chives
  • Toast red pepper flake in a 10in skillet. Add 2-4 for 2 minutes. Add 5-8 and liquor and bring to a simmer. Simmer oysters for 4 minutes, take off-heat and add chives. Serve with toast.
