Oxtail mac and cheese

Serves 4

  1. 2lb oxtail
  2. 6tb butter
  3. 1 onion
  4. 4 cloves garlic
  5. 2 thyme sprigs
  6. 1 bottle red wine
  7. 4tb flour
  8. 1-1/4 cup milk
  9. 1/2tsp nutmeg
  10. 2/3 cup creme fraiche
  11. 1 cup gruyere
  12. 2 cups cooked elbow noodles
  • Brown oxtails in 2tb butter. Add 3-6 and simmer covered for 3 hours. Shred meat, return to pot and simmer for 15 minutes.
  • Separately, cook remaining butter with flour. Whisk in 8-9. Add creme fraiche and 2/3 cup gruyere.
  • Layer half of oxtail, noodles and sauce in a 11.5in x 8.5in pan. Repeat, top with remaining gruyere and bake a 400 degrees for 20 minutes.
