Hong Shao Pork

Serves 4-6

  1. 3-1/2lb pork shanks
  2. 4tb sugar
  3. 1tb water
  4. 10 slices ginger
  5. 2 cloves garlic, sliced
  6. 1 shallot, sliced
  7. 1tsp fennel seed
  8. 5 star anise
  9. 2 cinnamon sticks
  10. 6 cloves
  11. 1 strip orange zest
  12. 1tb sesame oil
  13. 5tb soy sauce
  14. 1tb worcestshire
  15. 1 cup sherry
  16. Stock or water
  17. 1/2 cup cilantro
  • Boil shanks in salted water for 2 minutes and set aside. Heat 2-3 until starting to turn golden, add pork to coat and set aside.
  • Cook 4-6 for 1 minute. Add 7-11 for 3 minutes. Add sesame oil for 30 seconds. Add 13-14 for 1 minute. Add sherry for 1 minute.
  • Add pork and enough stock/water to cover and simmer covered for 3 hours. Remove pork, reduce sauce for 2-3 minutes and pour over pork. Top with cilantro and serve with rice.
